The Spéciale Jérôme Miet is the star of the house, the one chosen by the amateur who appreciates fleshy and balanced oysters.
Reared in Normandy and matured in Mornac-sur-Seudre, these oysters benefit from the best of both terroirs.
First of all, the freshness, the waves, the currents of the Normandy waters in which it will spend three long years developing.
And believe us, it will take advantage of this... until it reaches an exceptional meat rate, especially as the absence of competitors (yes, no mussels in Normandy!) allows it to take advantage of all the food it needs.
Then, the softness, the quietude of the clear waters of Mornac-sur-Seudre in which it will balance its flavours, until it reaches the ideal point of balance.
The oyster farmer selected the Spéciale before maturing for its regular shape, roundness and thickness.
Its flesh volume is greater.
When tasted, the Spéciale de claire differs from the Fine in the consistency of its flesh, its volume in the mouth which borders on the ideal, and a remarkable balance between sweetness and saltiness.
