The Spéciale was selected before maturing for its regular shape, its roundness and its thickness. Its concavity, more pronounced, announces a greater volume of flesh.
The Spéciale de Claire IGP Marennes Oléron has spent its life in this land blessed by the god of oysters and has also benefited from a well-deserved maturing in the claires of Mornac-sur-Seudre. It is here that the oyster adds to its marine flavour the subtlety of a taste of the land that lasts a long time in the mouth. This is the oyster that will be chosen by the amateur who appreciates fleshy and well-balanced oysters.

Fines de Claire Vertes Label Rouge

Beware! We are talking about a rather unique product, the first labelled seafood product, in 1989.
The Fine de Claire Verte Label Rouge, an official label awarded by the French Ministry of Agriculture, is subject to demanding, even very demanding, control standards.
Its colour, as chic as it is photogenic, is obtained thanks to the presence in the Claires of the blue navicule, a micro-algae filtered by the oyster which retains the pigment, marennine.
An exceptional oyster, marketed from October to May to respect its reproductive cycle, which guarantees it is not milky.

Claire Label Rouge sprouts

The Pousse en Claire Label Rouge is an exceptional product. For a long time, it was distributed in a confidential manner, reserved for a clientele of initiates.
Today, this top-of-the-range oyster and spearhead of Marennes Oléron is produced by a few informed professionals, including us. Including us.
Raised at a very low density, no more than 5 per square metre in the oyster bed, where it stays for four to eight months, it grows by forming characteristic lacy lines on its shell, called growth lines.
During its stay in the oyster beds, the oyster will reach a high level of meatiness and a crunchy firmness, as well as a pronounced taste of the land that lingers in the mouth.
